Foodie Snacks For 100 Or Less

I can always make a long story longer, but the short of it is I don’t eat the way I used to.

What I mean by that is I read food product labels; I don’t eat as much processed food; I cook from scratch even more than I used to; I log my food with an online app; and I eat ‘normal’ portion sizes.

Today’s post is about snacking. I still snack because I need to. Snacking is “doctor’s orders” and a strong suggestion from a dietician I see regularly.

You all know how much I like to cook, how much I like to try new flavors, and how much I enjoy experimenting with new recipes. This list is a sampling of my favorite snacks that are 100 calories or fewer.

It’s Almost Apple Pie Sprinkle a dash of cinnamon on 1 cup unsweetened applesauce.

Miniature Tostada On a small corn tortilla, spread 1/4 cup nonfat refried beans. Top it with shredded lettuce, diced tomato, and a sprinkle of shredded low fat cheese.

Mediterranean Tomato Dice a medium tomato and top it with 2 tablespoons feta cheese.

Cottage Cheese With Melon For a twist on cottage cheese with fruit, combine 3/4 cup diced cantaloupe with 1/4 cup nonfat cottage cheese. If you’re craving sweetness, drizzle a little raw honey over it.cottage-cheese-cantaloupe

Carrots With Hummus This is the old veggie dip idea but with protein instead of fat. Crunch on nine or ten 2-inch carrot sticks dipped in hummus. Bonus points if you make your own hummus. Hey, it’s easy to make and tastes better than store-bought.

Santa Fe Black Beans Combine 1/4 cup drained and rinsed black beans, 1/4 teaspoon salt, and 1 tablespoon nonfat Greek yogurt. It’s a hearty snack with protein that won’t quit.

Greek Watermelon Can you tell I enjoy the flavors of the Mediterranean? This one combines watermelon (1 cup) and 2 tablespoons feta cheese. Those seemingly incompatible flavors do work. (And I really like feta cheese.)

Oh-So-Sweet-Potato This is not a sugary sweet potato; it’s sweet because of the lack of sugar. You’d be surprised how quickly you can get used to not eating sugar on food. Just bake a small sweet potato and sprinkle salt or cinnamon on it. If you want to, microwave it in a potato bag. If you’re handy with a sewing machine, here’s an easy pattern for making your own bag. The potatoes come out great this way and it’s so quick.

Turkey Tartine It’s a fancy name for a foodie snack that’s a simple open faced sandwich. Spread 1 teaspoon mustard on a slice of toasted whole grain bread and lay on 2 thin slices of deli turkey.

Carrot ‘Salad’ Mix two grated carrots with 1 tablespoon raisins, 1 teaspoon raw sunflower seeds, and 2 teaspoons balsamic vinegar.

Black Bean Salad This one’s not only lean, it has protein and fiber. Mix 1/4 cup drained and rinsed black beans, 1 small chopped tomato, 1/4 cup chopped green bell pepper, and a pinch of chili powder.

Spiced Cottage Cheese Mix 3/4 cup nonfat cottage cheese with a pinch of chili powder and a pinch of curry powder. A garnish of chopped scallions is nice.

strawberryspinachsaladStrawberry and Spinach Salad Mixing savory and sweet reminds me of those cooking shows on the food networks. So be a pro and mix 1 cup baby spinach with 1/2 cup sliced strawberries. Drizzle on 1 tablespoon balsamic vinegar.

My tastes run to the spicy and savory so this baker’s dozen snack sampling reflects that. You probably have some favorite healthy low-cal snacks as well. Share them in the comments. I’ll give you bonus points for that too!

In the meantime, you know what I always say: get creative in the kitchen. Life’s too short to eat boring food.

The gift of a cheerful disposition
One of the easiest ways to feel good is to extend cheerfulfulness. It’s not hard to say “Hello” or “Thank you.” And we all look better when we smile.

Tactfully Speaking

We may know in our heads that how we say something is as important as what we say. Yet we still get into situations in which it’s difficult to express our ideas and opinions so others feel engaged and appreciated. We sometimes forget that conversation is two-way.

When we speak, what specifically do we want the other person to hear and know? Are we expressing it clearly and with a sense of conviction? If we are, do we express ourselves and extend grace to the other party so they can, as best as possible in that moment,  understand us without feeling attacked?

I ask these questions of myself before I pose them to anyone else. I still get into those situations in which I have a hard time expressing myself. But what a blessing for me that people model healthy communication skills so that I can build bridges instead of bonfires.

Years ago, I took on a writing challenge to create a poem from a template with the resulting work informing readers about myself and my family history. This is the result, a poem I had the privilege of reading at my father’s funeral. I regret he never had the opportunity to read it before he passed away. But then, Dad also knew where I was from.

Heritage

I am from buttered bread

sometimes with Welch’s jam.

I am from the hand pump on the back porch

that spewed out ice-cold water

and you weren’t really thirsty

but you had to take

your Saturday night bath.

I am from the lily of the valley

growing under the lilac bushes,

the scent sucked in just before

you gave them to Mama

who loved them more than you.

I am from Sunday morning nip and tuck.

Dawdling ‘round from Uncle Bud,

cousin Toad and his counterpart, the Frog.

I am from the way we tease and laugh out loud.

From “Stop that squirming”

and “Bow your head.”

I am from a Bible Mama plum wore out.

From Daddy’s faithful Christmas and Easter Sabbaths.

I’m from the middle of a little bitty place

and a rich Christian heritage

across the Rhine River in Germany.

From fried chicken. And apple pie

in a bowl with milk poured on.

From the toddler who drank fuel oil

putting scare into us all;

a vision of stomach pumps not quite real.

From the backyard wedding of my sister

and a reception in the woods where we

ate picnic style licking barbecue from our fingers.

Dad pulls out on his little whims.

Repeating names I’ve heard a thousand times

but won’t remember, he tells me I am from

these folks of buttered bread, hand pumps,

laugh out loud, and worn out Bibles.

Foodie Converts (Food)

Most of the time, I cook for one person (me). For that reason, recipes end up being changed to accommodate. Instead of making a recipe for eight servings, I cut it down to one or two so I’m not eating that main or side dish all week. Sure, there are some dishes for which I cook a whole batch and freeze enough for later. But some foods I’d rather not preserve that way because they’re just not as good thawed and re-heated.

Something that helps me to cut a recipe is having simple conversions I can make while baking or cooking. Today I’m passing on some that you can memorize if you need to decrease like I do. You may even find it handy to know these simple conversions if you’re increasing a recipe.

It’s easy to double; you just multiply by two. But how about making a recipe one-and-a-half times the amount? That’s a little trickier. Foodies make it work, though, don’t we?

Here are some simple conversions I’ve managed to keep in my brain (for the most part) for when I need to “alter” a recipe to suit my needs.stainless-steel-measuring-cups-spoons-250 square

Basic conversions

  • 3 tsp. = 1 Tbsp.
  • 1/3 cup = 5 Tbsp. + 1 tsp.
  • 1 c. = 16 Tbsp.
  • 2 c. = 1 pint
  • 4 c. = 1 quart
  • 1 oz. = 2 Tbsp.
  • 16 oz. = 1 lb.

Can Number Equivalents

  • No. 300 = 14-16 oz. = 1 ¾ c.
  • No. 303 = 16-17 oz. = 2 c.
  • No. 2 = 1 lb. 4 oz. = 2 ½ c.
  • No 10 = 6 ½ – 7 ¼ lbs. = 12-13 c. (This is handy to remember when you’re cooking for a crowd)

One-Pound Equivalents

  • 2 c. butter
  • 4 c. all-purpose flour
  • 2 c. granulated sugar
  • 3 ½ c. sifted powdered sugar
  • 2 c. milk
  • 9 medium eggs
  • 2 2/3 c. oatmeal or brown sugar
  • 1 1/8 c. rice (uncooked)
  • 2 1/3 c. dry beans
  • 2 c. ground, packed meat

Pan Size Equivalents

  • 2 8-inch layer pans or 1 ½ to 2 dozen cupcakes in muffin tins
  • 3 8-inch layer pans or 2 9-inch square pans
  • 1 9-inch layer pan or 1 8-inch square pan
  • 2 9-inch layer pans or 1 13×9 pan, or 1 9-inch tube pan or 2 8-inch square pans
  • 1 9×5 loaf pan or 2 dozen cupcakes in muffin tins

That last conversion comes in handy when I want to make apple, zucchini or carrot bread to freeze, but I want to freeze individual servings for snacks. It would also work for individual meatloaf servings if you’re trying to maintain portion sizes.

Remember to measure liquids and dry ingredients correctly.

Use dry measuring cups for flour, sugar, shortening (or other solid fat), and various chopped or minced foods. Liquid measuring cups (glass, plastic or other material) for any kind of liquid. Don’t know the difference between a dry measure or liquid measuring cup? Liquid measuring cups have a spout.

Use measuring spoons to measure ingredients such as lemon juice, flavorings, salt, spices, etc.

Certain ingredients like flour and powdered sugar should be spooned into the measuring cup and leveled off, never packed in. Other ingredients, like brown sugar, butter or shortening, should be packed down into the cup and then leveled off.

I’m not the only person who needs to make changes to recipes. As I travel the web and investigate new foods, taste combinations, and options, I see recipes in metric measurements. This Midwest cook doesn’t do metric! That’s when I need more help and I rely on what others who’ve gone before me have created.

A Wrong Number Works Out Well

There’s always good news out there if you look for it.

Today let’s focus on one man’s effort to rescue a frightened grandmother. If you thought car salesmen don’t deserve a good word, think again. This excerpt from the story tells, in our hero’s own words, a little of what happened.

“She called our landline and got through to our receptionist, who asked me what to do. I said, ‘I’ll go and make sure she’s ok.’ At first I thought she was just across the road, it turned out she was about two miles away.”love_boom_200_167

The response just described won’t always happen if you transpose numbers. Usually, people just say, “I believe you have a wrong number” and hang up. To his credit, Dang Vuong didn’t.

Bend Like Gumby

Staying flexible means being able to forego what we believe are our rights. Rights to resources like our time, energy and money. We’re able to move from one thing and invest in an endeavor that has bigger potential or works better. Simply put, being flexible means you have no problem stopping doing one thing, and starting doing another.Gumby

Being flexible works in our lives no matter if it’s a ‘big’ thing or a ‘small’ thing. And let’s face it, some things are just small things.

As far as being flexible, I’ve learned that if I bend a little, I don’t get as frustrated. It’s easier to work on a team. And I often learn something I may not have if I’d remained committed to having my way.

I won’t compromise my values to be flexible. I won’t bend that far. But I’ve also learned I can go steady on and hold to my values in a gracious manner. While I keep an open mind and listen to varying viewpoints–after all, new information might change a formerly held belief–my mind has already been made up on issues testing my faith in God.

 

Turrets of the Castle

Today’s challenge was easy as far as selecting a subject. Not so easy getting the shot since this home sits on a busy street corner. My favorite elements of the structure, which we call The Castle, are the turrets. People live in the house, but probably feel like they’re in a tourist attraction. If you have friends visiting, it’s customary to drive by with them so they can see it too.

Schedule for Stuff

Here at The Fruitful Life I like to post regular features. I may have started the blog to write about how the Christian faith molds my life. But since I began, I realize the word “fruitful” can mean more than that. I want to live the totally abundant life Christ came to give me.

My interests are many, thanks to God who created me. But to post about everything isn’t realistic.  However, you’ll find on this site essays about things I can’t help but share. Reading is a passion of mine. I reeeally enjoy watching movies (even old B&W ones!). So occasionally I feel a stirring and write about those things.

I also have a passion for food, learning more about cooking and baking, and discovering new recipes. Sometimes I’m precise in the process; sometimes I cook ‘by guess and by golly.’ That’s here too.

Below is a tentative schedule for postings on The Fruitful Life. Sometimes I take little vacations or life gets hectic and I have to skip a post. Remember that abundant life? Yep, that’s what happens.Blogging-shakespeare

 

Media Monday  Some Mondays will see either a book review or a movie review. Those offerings are strictly my opinion and the reviews may not be for media recently released. I believe that, after reading a book or watching a movie, I may help someone make a decision about whether to try it too. If that’s media which is not so new, it’s okay. I’m often influenced by the reviews–good and bad–that I read. You might even see an occasional mention of music here.

Wednesday is for Faith  The middle of the work week has been the usual day when I share something about how my faith instructs all I do. I’ll be the first to say I don’t live the Christian life perfectly. That’s why I so desperately need a savior. Writing about what I believe and using the Bible to explain it helps confirm my faith.

Foodie Friday  Friday food posts will be instantly recognizable since they’ll have the word “foodie” in the title. Friday features tips, recipes, ideas you may not have tried, or something heartfelt about how we respond to food and eating. I’m not a professional photographer so bear with me when I post my own picture stuff.

Good News Any Day  I decided recently, after some time being involved with social media, that I want to share some good news. “How do I do that?” I wondered. So far, I have a couple ideas. One is obvious: search the Internet. It’s not all bad news out there and we need to hear good news to keep our psyches afloat. Hope buoys us up and knowing people are doing well or ‘doing good’ gives us hope. I’ll be keeping an ear to the ground and either telling the story in my own way or offering links to various good news stories.

And speaking of Good News, please remember that I write from a Christian perspective. Even when I’m not writing about food, I pray what you see here will be seasoned with truth and grace. Just as Jesus offered everything he said and did.
